Bruce Lister, Food Scientist and Consultant, has been recognized by Marquis Who’s Who Top Scientists for dedication, achievements, and leadership in the field of food science.

As an undergraduate, Dr. Lister studied at Columbia University, earning a Bachelor of Science in chemical engineering in 1943. He started as a laboratory assistant at General Foods Corp., rising to the rank of division research director over nearly 20 years with the company. In 1962, he left for a position at Nestle Foods Corp., starting as manager of technical services, and eventually becoming president of corporate affairs. In 1989, he left Nestle Foods Corp. to work as a consultant in the field, work that he continues to this day. Additionally, from 1980 to 1991, Dr. Lister worked as executive director and chairman of the technical committee on the board of directors for the Tea Association U.S.A. He has been a member of a variety of professional organizations, including the Codex Committee of the Institute of Food Technologists, the American Association for the Advancement of Science, the American Institute of Chemical Engineers, and the New York Academy of Sciences, among others.

Through the course of his career, Dr. Lister has served the United States government, in various capacities. He worked as the U.S. delegate to the tea committee of the United Nations Commission on Trade and Development, the president of the International Hydrolyzed Protein Council in Washington, D.C., and the U.S. delegate to the Full Commission on Chocolate, Soup, Dietary Foods, Labeling Committees, and the Codex Alimentarius. Dr. Lister also worked with NASA to supply menu items for all space missions from Project Mercury through the Space Shuttle Program. He holds multiple patents in food formulations, and is a fellow of the American Institute of Chemists. He was also awarded an Honorary Doctorate from the National Association of Food Equipment Manufacturers, among many other honors. As a further testament to his success, expertise, and influence as a food scientist, Dr. Lister has been included in the 26th edition of Who’s Who in the East, as well as multiple editions of Who’s Who in the World, Who’s Who in Science and Engineering, and Who’s Who in America.
